Grocery List.

I'm working on preparing a grocery list for the upcoming weeks and I thought I'd poll you, my readers.  I'm looking for some new recipes that call for 100% (or nearly, not including seasonings) fresh food.  Veggie recipes would be even better, but anything that calls for mostly or all fresh ingredients would be great.  Any suggestions?

This is my new favorite recipe and is a good one for summer. I don't know if it has a name or what I would call it. It is basically a Mexican pesto sauce for chicken.

In a blender, combine a handful of cilantro, 2 garlic cloves, two serrano peppers (more if you want it spicy, 2 is a mild amount of heat), juice of 1 orange, juice of 2 limes, and about a cup of extra virgin olive oil. Blend until smooth. Add the sauce to some shredded grilled chicken (or buy a deli rotisserie chicken and shred that) and heat in a pan.

The chicken is good for a salad, in tacos, on a quesadilla, or as a filling for Mexican egg rolls.

We are an eat on the run kind of family so I confess, we eat "dinner from a box" one night a week. Here is my favorite fresh chicken with potatoes!

The night before (think ahead!)

mix all and store in a tupperware or large ziploc
1/2 cup GREY POUPON Savory Honey Mustard (you can also use stone ground mustard!)
2 Tbsp. lime juice (we actually use all the juice from 1 fresh lime)
2 cloves garlic, minced
1 Tbsp. soy sauce (can be ommited)
1 tsp. grated lime peel (optional)
4 small boneless skinless chicken breast halves (1 lb.)

40 minutes before dinner -
Pre heat grill
slice up 4-6 medium potatoes
spray aluminum foil with nonstick cooking spray
place potatoes on foil
season with salt, pepper, and any of your favorite seasonings (we like to add a little Mrs Dash!)
Place foil pack on grill over medium hot spot
After 20 minutes turn foil pack of potatoes over and add chicken to grill
Chop up ingredients for salad and convince child and hubby to set the table
flip chicken
add any marinade from the bag or container to the chicken
pour drinks for dinner and rinse off utensils and used dishes
check that chicken is cooked through
Turn off grill
Using an oven mit take foil packet of potatoes off grill, open and put into a bowl. They will be VERY hot!
Pull chicken off and serve with fresh lime wedges

We usually sautee a little asparagus when we have this is the spring or we grill zucchini on skewers with a little Mrs. Dash in late summer.
