The New Year swiftly approaches, and with it, the dreaded new year's resolution. This year, my resolution is simple: to eat healthier and get moving. As part of this resolution, I include the clause that I will *try* to eat breakfast each day. To launch into this new resolution, I've discovered this ...

Time for one of my favorites, Tiramisu Oatmeal . As always, I changed a couple of things with the recipe, most notably that I used milano cookies in place of the ladyfingers, and again used french vanilla instead of greek yogurt. Oh, and I used a lot more chocolate chips.
*I would reccomend t ...

Up next, Apple Crumble Oatmeal, German Chocolate Oatmeal, and Strawberry Dumpling Oatmeal. All three were delicious, but I'd have to say my favorite so far, of any that we've had, is the Apple Crumble Oatmeal . It was more like eating dessert, with no extra sugar actually added other than the natura ...

This particular oatmeal was quite heady with mint. I would suggest either going light on the cocoa powder, or stirring it in before your first bite, (I accidentally inhaled a bit of powder, :) hazards of being overzealous, I suppose!) but otherwise enjoy this oatmeal as is.

PB&J Oatmeal
This oatmeal was lovely and light. It was comprised of what has become the base recipe, (1 cup oats + 1 cup milk + 1 cup water, add banana and flaxseed meal/wheat germ when it begins to simmer. Add vanilla, and sugar, if desired. Serve) topped with a dollop of both peanut butter ...

I was planning to make my own shortbread for this, but ended up having some lemon shortbread on hand from a g ...

My apologies to my readers for again delaying on posting. Yesterday was my day for catching up a bit, as I forgot to buy pumpkin for yesterday's oatmeal, and so we had pancakes instead. We'll resume the oatmeal challenge today, but in the meantime....

Pumpkin Maple Oats with Pecans
This was better than I thought it would be, considering there is cottage cheese in it. The cottage cheese mostly melted though, and left the oatmeal with an extra creamy texture that was nice, if still a bit different.

This was really good, though a bit more tart than I'm used to. I ended up crumbling more graham cracker on top after the photo was taken, because I just like a bit more, and it had gotten soft. Kind of fun to have the lime wedges swirled around in the oatmeal, too. I used key limes, instead of the r ...

Mmm. Oatmeal.
Ok, this isn't something I'd usually say. I do like oatmeal, but only on the occasional, 'can't think of anything else to have for breakfast' day. Besides this, I'm not accustomed to having a regular breakfast time, and often breakfast becomes brunch, or is simply missed. As I said pre ...
